How to create Deposit for unknown Item weight?

We sell beef by the lb. and when someone order beef we don't know the weight until we pull the beef package. We know there are two steaks in package but don't know weight until we pull it. How can we set up a deposit for item to hold item for customer,  then pull order and finish charging out package when we have final weight?

I do not think you can with Square.  But what if you created an Item call it Meat Deposit.  Leave the Price Blank or fill in the amount you would charge for a deposit.  Then when customer calls to order, Tap or select Meat Deposit and enter the amount.  Select your Customer or add them to this order.  Print this out and attach it to to their order.  When they come to pick up their meats, Manually adjust their price by giving a Price Adjustment = to the Deposit Meat amount you gave earlier.  That would be the only way I know of, and this would only be available on the POS or Phone Orders since as far as I know you can not have a variable price in Square that customers would enter their own Price to order.   I inform you of this since the question is in Square for Retail forum.
