To print receipts automatically, please go to Settings > Printers > Create Printer Station or select existing printer > Select Use this printer for Receipts > Toggle On > Print receipts automatically:

You can create taxes from your online Square Dashboard:
Keep in mind that your taxes will automatically apply to sales where a custom amount is entered. To disable taxes for custom amounts visit your tax settings in Square Point of Sale.
