Just a guess here as there's not enough info on how you are selling - you mentioned "Link". From experience, for example, you have setup your items and have enabled the "inventory" feature. This works great for items that you are selling online via your website shopping cart however, if you created a Buy Now link or QR Code for an individual item and then shared it with someone, seems the inventory feature does not work. I had two items on my website that showed "Sold Out" because there was only 1 each so online the items could not be added to the cart or purchased. Yet, if I created a "link" and sent it to someone, the item could still be purchased and they could even select more than one. Note, the individual links are different from the regular shopping cart setup but, should still work the same - you should not be able to purchase the item if it is sold out. To date, have seen a fix.
