So I am having technical issues using the tap to pay feature through the square app. I utilize Acuity to schedule my appointments and take deposits through the square payment processor. When I try to do a test checkout for payments, the "Tap to Pay" button is still grey meaning it's not allowing payment.
I'm thinking we need more info -
Has Tap and Pay worked and now it does not ?
Are you using Square's POS App to process the transaction or are you doing everything thru Acuity which then uses Square to process the transaction ?
Note, the volunteer members here do have hands-on experience using Square's Apps and Hardware however, we are not the same as Tech or Customer Support.
I know that Tap and Pay works with Square's POS App however, I don't believe it will work using a 3rd party app. Acuity provides some good details here for accepting payments using Square - both the Magstripe Reader and the Contactless and Chip Reader are mentioned but, not Tap and Pay.

So yes, I have did the following above^. It says on square that my Tap to Pay is enabled and the status says "Ready" but when I tried a "test checkout" to see if it works the button still comes out grey and white. Im wondering if I have to add a card on file for one of my customers first and then try to test it again? Im not sure.
To see where the issue is how about open your Square Point of Sale on your device.
Type in a $1 test charge, not trying to connect to anything else.
And the see if the Tap button appears.
This will see one if the Tap to Pay feature works for you and 2 if the connection between Square and Acuity is connected correctly.
If the Charge Button changes you know the issue might be getting the correct amount from Acuity even if you did the Test Charge.
If the Charge button is stilled greyed out then there is an issue with your Square setup or device.

So to answer your first question, no. This is my first time activating Tap to Pay to use for receiving payment from my clients. Im using Acuity Scheduling Squarespace for booking appointments for my clients and using the Square's POS App to ONLY receive the remaining payment amount from my clients. I would like to receive it through Tap to Pay as it's easier for my clients to tap and go!
