Best way to display items with multiple options?

Looking for advice, would prefer not to rewrite my items, but it may come down to that.

 

We sell varietal honey.  There are two options - variety, and size.

 

We started with Register, so tweaked for that.  We have category "Honey", and items "Honey, 1 gallon", "Honey, 1/2 gallon", "Honey, 1 pound", etc.  Each item has the modifier 'variety' and 'size'.  Since customers tend to purchase multiple jars of the same size but different varieties, this works well to ring up sales quickly in Register, and it tracks the stats we need.

Now we are looking at Online.  On our current website, customers like to read and learn about each variety, then make a purchase in the size they want.  They are looking at variety first, not size.

Ideally, I would like to have category "Honey", with subcategories "<variety>" and "<size>".  The size works fine, since I already have items created based on size in Register.  However, applying just the individual options to <variety> has not worked, it wants to create a new item instead.  I tried copy and pasting the SKU's from the appropriate items to the new list, but Square sees them as new items with duplicate SKU's, not as different ways to display the same item.

I COULD sit down and create category "Honey", and create items "Honey1", "Honey2", "Honey3", etc, with the option of size on each one.  It would require retraining my register people.

Anyone have suggestions as to how to proceed?

In my experience, we had to create a secondary menu for use only online. attempting to reuse items in the register didn't work they way we wanted. Also allowed for different pricing or fees as useful.
