Currently, the ability to export only selected columns from a Custom Report isn't available in Square Dashboard. When you export a Custom Report, all columns are included in the CSV file by default.
This would be a valuable improvement, so I'd encourage you to submit this suggestion as a Feature Request here. This ensures our Product team can see your feedback and gauge Seller interest in this functionality.
In the meantime, you'll need to manually remove any unwanted columns from the CSV file after exporting it using a spreadsheet application like Excel, Numbers or Google Sheets.
