In shop all template, can I set up a custom order?

I use the shop all template and want to set up a page where customers can request a customised order based on a number of variables - how can I do this?

Also, regarding pricing for the custom order, do you envision customers altering the price by selecting different product variables, or would you prefer to receive a brief for each custom order and then provide a separate quote?
