I have found many of my item descriptions have just disappeared! When I started adding them back in and checking on the site, they are still missing, yet show up on my dashboard

Chances are your browser is looking at an old version of your website, one without the descriptions. Clear your cache and browsing history and restart your browser. All the changes you've been working on should show up at that point.
That doesn't solve the loss of descriptions, though. For that, I recommend contacting Customer Service so they can look into your account and try to figure out what happened.
