I am a USA resident per my Enhanced NYS drivers license - have a new Canadian square Account, I have my rental address (Canadian) entered, I have a verified Canadian phone number, verified Canadian bank account. I do have a non-resident Canadian Business Number but I am not registered with HST/GHT based on my annual gross sales , therefore do not require a CRA account number.
In order for me to complete registration , square is asking me to re - enter my Canadian address and phone, which i do... then i get a red error code asking me to verify my Date of Birth.... i cannot find anywhere in my account where i can possibly verify or confirm my date of birth. I cannot take card payments without doing so. How can I verify my date of birth? Should voluntarily register GST/HST to input those numbers? would that even help?

Normally, when setting up a Canadian account you will have to have Canadian identification. Something like an Enhanced NYS driver's license wouldn't qualify because it's a form of US documentation.
