I would like the members of our association to renew their memberships via our online shop ( ralga.square.shop ) but I really don't know where to start.
I have a form that has specific questions. I would like members to complete the form fields, and then, when submitted, are taken to payment page.
Has anyone done anything like this before please?

So all item pages will display the store's shipping and return policies if you have manually added them.
You can remove this text by going to Online > Settings > Checkout > Edit Store Policies.
You just need to delete your text and save it, then you won't see this message on any item pages.

It sounds like what you are looking for would be a feature request at this time.
You could set up a Square Subscription which will do the opposite, they will need to pay and in the subscription, you can attach a link for them to input their membership details.
You could create a non-physical item membership within Square Online itself, more details here.
Or you could create a Subscription and embed it into your website.
Have a look at both options and let me know if either would work for you.

I've changed this to an event but I've noticed something else.
Before adding to the shopping cart, I would like to remove, or change, the Shipping Policy, can you tell me how to do this please?

Do you mean that it's applying shipping fees to the non-physical items @RALGA?

If you look under description, you will see Shipping details. I don't need that to be showing on this item
