We use the open ticket system (now orders) to log orders coming in from customers including a hospital with over 500 doctors. We would convert these orders to invoices but Square removed the feature. Now they are telling us to manually recreate hundreds of invoices every month. WHY WAS THE FEATURE TAKEN OUT?

You are correct, it does look like this feature has been removed.
I checked in with our Account Services team on this though, and they did offer a workaround or two:
Unfortunately, we not have a timeline if this feature will be brought back at this time.
