Is there a way to default my account so it does NOT send reminders? I often forgot to turn them off when I create a new invoice. They annoy my customers because they go too soon and too often.

Yes, you can adjust your template to disable reminders.
Dashboard -> Invoices -> Settings -> Invoices
Click on the box marked Square Template right under the blue create new button. Then click Edit in the lower right of the screen. You can disable reminders here then save the template.
