Remove yet still track inventory used as samples/demo/display?

I have been processing a transaction with a discount of 100% which I name TESTER to remove stock from inventory that has been opened to use for demo/sample item. However, it records the retail value of the item as part of my net sales. Simply removing the amount from my inventory doesn't work for me, as I'd like to be able to track the amount of wholesale costs I can use for a write off at the end of the year for demo product. 

 

Any suggestions?  Bonus would be if it is a category or item that is visible as its own column in a monthly or annual download for easy sorting at tax time.

Have you considered tracking samples/demo items as Comps? So, instead of setting up a separate item in your library called 'sample', you can track each time an existing items is comped. You can set multiple different reasons for each comp and there's a Comps report too! 

 

You can enable Comps and set Comp Reasons from your online Square Dashboard, and then you can comp an item from the app.
