I don't need my international clients' phone numbers, plus they can't seem to book without a US phone number. Is there a way to change the required fields so international clients can book an appointment?

This would be considered a feature request at this time.
In the meantime, what other Sellers do as a workaround is they have their International customers put the business number (your business number) in the number box and in the event that you do need their phone number they can include that in the notes section.
