I am working to open up a food Truck. My question is, when I go to some private events. I will ask for a $200 deposit. Now, during the time, how do I charge against that $200? If the food sold is over $200, I need those extra charges sent as an invoice.
I charge a $200 deposit, anything that is sold over the $200 is billed back to the customer.

@store232 I would take a look at house accounts. I would treat your $200 more as they charge rather than a deposit that way you can have the full working capital. Then as you go more you can build to their house account and then invoice them for the difference. You could even charge the initial deposit / fee to the house account and bill them to pay it and then just keep charging against the account for what goes over that I'm just not sure if you can have a negative balance that way. Invoicing does have the ability for people to put a deposit but that's usually not an open end.
