I have set up automated emails through Communications > Emails & Alerts. I have set up a sender profile, I have customised from email theme etc.
How do i track that they are actually sending?

At this time, there is no way to view and track the email and text notifications sent to your customers.
A workaround would be to use the Activity section of your orders' details. In your Dashboard > Items & Orders > Orders > Click on the order to see the details. I understand this is not an ideal solution, but this should give you an idea of the type of communication sent to your buyers.
