Sold Business, so when transferring to there banking and emails, How do I get access to all my sales from Jan 1 2023 to date of sale for taxes?

From what I can see is you can not transfer your Square Account to another person or business when you sell a business.
This is because of Bank accounts with Your name on them for Tax purposes. The Buyer would have to create their own Square Account with their Tax Id or EIN and Banking information. Now you could download your catalog for the new owner to import into their Square account and Customers etc. Just as far as I know you can not just sell business and give new owner your password for them to change the back office settings to their bank account etc.
I would call Square Support at the number in my signature line for clarification as we can not answer specific account questions here. Also find out how to transfer Loyalty Rewards and Gift Cards to the new owner of the business.
