I do boat/marine service work. When I do a job I may use 20-40 items out of my inventory, but I only want the customer to see "100 hour annual service $123.45".
Is there a way to do this?

Would need to know a bit more as to how your business and items are setup. Are you selling parts and/or service via both a physical and online ? That may provide some clues for others here to help.

It is a mobile truck. Nothing really online at all. I will send invoice to email but I do not think that is what your asking (often I never actually meet the customer).
I will have all of my inventory in Square - if a customer needed something I could sell it, but it is mostly for my service work.
I do not do lot of work with invoices but I do a lot with sales and the inventory aspect. You may want to have a service Charge of Winterize/Summer Maint. for $123.45 could have this as the name of item in retail.
Then list the Items you use, and adjust their price to $0.00. Or have a Discount As a variable $ Discount. Have the Discount Labeled as Discount of Parts included in the Service. Then when you make the Invoice put the 40 items in, see the total, make the Discount dollar amount that and then add the Service Fee of$123.45. This 1 will show you what was removed from Inventory, 2 Keeps Track of How much you are giving away in Parts with this Service, and 3 Makes your Customer think they are getting Free parts. The Discount would look like :
