Thanks for getting in touch. At the moment Square does not feature document signing facilities - you'd need to use a dedicated document signing up such as SignNow.
Square will allow for signatures on card payments if required, via the touchscreen of your mobile device. In Australia this would be most commonly done with overseas credit cards that still require signatures.

If you want to add electronic signatures to documents, it’s worth considering document management and eSignature solution like PandaDoc.
PandaDoc enables you to create a range of documents (proposals, quotes, invoices, etc.) with electronic signature fields.
Square integrates with PandaDoc (https://www.pandadoc.com/electronic-signature-software/). This allows customers to complete the payment process within the proposal, invoice, or quote. They just have to click your payment button and they’re away. Payment details will automatically update to your Square account.
