Wanting to scan items out of our inventory to keep "track" of what types, sizes, amounts, etc., are being transferred to another area of our business, which I can do but it alters our Gross Sales at the end of the day. I had entered a discount code for this other area of our business, so at the end of the day the Net Sales was accurate, but not the gross sales. Is there a way to get around this?

Are you using Square Locations for these different "areas of the business"?
If so, you can transfer stock between locations.
If not, you may want to utilize Comp and set up a Comp name of "Internal Use" or "Transfer to Area N"
Using the Comp method will still still show the gross sales including these items, but you'll be able to separate out comps from actual discounts that you offer to your guests.
This is what we do when we are transferring stock for internal use for samples for instance.
However for transferring stock between square locations, we have locations set up and we are able to go into the inventory management and make that transfer without it appearing as a sale in the gross sales.
