Thanks for your post, and welcome to the Community!
If you'd like to add custom text to the Header section of your Square Online site, select Header from your Site Editor, then scroll down to the Content section of your editing panel and expand Logo. From there you can select either Text, or Image.
If you'd prefer to keep an image as your Logo on the Header, I'd recommend adding another Section below the Header. Or, adding the text to your Main Banner.
