I have never used gift cards before. Are we paid for them when they are purchased or are we paid when it’s been redeemed?

You get the money up front - the customer purchases the Square Gift Card (either physical or eGift), you get the funds same as any other transaction - the Square Gift Card can only be used at your business (in person at your business or online via your website) for the amount purchased.  More details here.
