I own a floral company and most of the orders come online and when it gets to the checkout page, customers complain that there is no where to add a "specific message" to a loved one that they're sending the flowers to. I asked chat support and they said there is no option for that right now and to add it here so that in the future they can add it.

First, the support person probably should have been a little more specific. Square has a formal feature request system that can be found at the Ideate Board. Here you can submit requests to the various Square product teams for consideration. But, before you do that, I might have a solution that would work for you.
Square Online has a unique modifier type that only works Online right now, and does not work in POS. It is called a text box modifier. To use it, you have to use the Square Online Item editor, not the regular dashboard item editor. Pick one item that needs the gift message option. Then…
After that, all you have to do is modify each item in your online store and Apply this new modifier to it. Unfortunately, text box modifiers are not yet available in POS, as I said, so you can’t bulk apply them to items like you can do with list modifiers. It sucks because that means a lot of manual work if you have a lot of items in your online store that need this gift message. But, once you’ve done it, it’s easy to do with new items.
