I need to disable the option to enter deliver address and make sure that customer enters email address at check out (online product).
Can't work out how to do this?

Thanks for your post - it sounds like you have delivery set up as a fulfilment option on your website but you are not offering delivery is that right?
If this is a non-physical item then you may need to change how you have set up the item - you can read how to do so here.

I've seen various references in help to options that will solve these problems, but they include navigation and menu options that I am not finding. I read the article you linked to, and tried to set up the product again from scratch, but fell at the first hurdle. There is no "Item type" box when it create an item. Also couldn't find "Site items" and "Add items". that they mentioned, but there is a "Create items" box under Items. Trying to attach screenshots from imgur but they are now showing.
Obviously, going wrong here somewhere.

It looks like you are making edits from the Item Library (for physical items) rather than the Square Online overview (Online items)
You can access your online items from your Square Dashboard > Online > Items > Site Items.
Once you open up the item you want to change, you can edit the Item Type.
