Hi. I'm yet to set up online booking but wanted to ask if there is a way that when I client books online am I able to have it set up so I have to manually authorise it before it confirms?

Yes, you can do this with Appointments! Go to the Appointments section of your dashboard and go to Settings > Calendar & Booking > Online Booking Preferences > Reservation Guarantee and select "Business must accept or decline all appointment requests".
