If you choose not to upgrade before January 9, your account will be upgraded automatically between January 9 and January 16, 2023. To upgrade, go to your Dashboard and navigate to More > Settings > Checkout > Upgrade Experience."
I went there and can't upgrade please see screenshots René

I am on 6.7 and another vendor in my Farmers' market is on Square POS 6.8 I can't upgrade

Looking into this, it seems that the system detected that one of your devices was using the previous POS experience @GourmetOnWheels If you visit this page on your devices and they all read "Revert to previous experience" means that you are already updated.
Now in regards to 6.7 vs. 6.8, this might be related to your iOS or Android version. Can you share which device and operating system version you're on?
The 6.8 just showed up on my iPhone I am now on 6.8
