Thanks for reaching out and welcome to the community!
With the Square Online platform, orders actually flow through based on your online store settings (eg pre-set hours you're open to accept orders) and don't actually need to be accepted - it's assumed that if you're set as open to take orders then you'd like orders flowing through!
You can read more about accepting orders here and if you want to limit orders within a given timeframe check here.
Once an order has arrived you can mark it as "In Progress", then "Ready" and finally "Complete".
