I think all you are looking to do is to customize your set hours, but let me know if the below isn't what you're looking for ✨
You'll start by logging into your Square Dashboard > Appointments > Calendar
Click the Edit Availability button, which will default to a One-time change - if you want to make a change to your recurring schedule, be sure to select Recurring schedule before making any changes here:
See the little ( + ) symbol to the right of your hours? Click that to create multiple subsets of open hours on one day!
Feel free to play around here with the hours, but I think this covers what you're looking to do.
