We've used Square point of sale for six years, but have just recently started using the payment link option for customers to prepay before they arrive. We need customers to be able to request a pick up date/time when they pay through the payment link, so we will know when they want to pick up their purchase. Is this possible with the payment link texts?

There are a few different ways to achieve your goal.
In this article, you can learn how to customize settings for your Checkout Links.
Three options here would be helpful: accepting notes from customers, enabling custom fields and setting up fulfillment for checkout links.
With custom fields and notes, you could simply direct your customers to leave in those fields the desired pickup date and time.
It is a really simple solution that does not require much of your time to set up, but does not have options to limit pickups to your open hours or establish a prep time.
On the other hand, if you go through the process of setting up your fulfillment methods in Square Online, you'll be able to customize a ton of details for your pickup orders to work just how you want them to. You can learn more about this feature here.
Keep in mind that Checkout links were not built for pickup orders, so I would definitely recommend building a Square Online Store to take full advantage of our pickup feature.
