Setting fulfillment hours for food take out

We are getting into take out at our retail fish shop. trying to set our pickup hours is being a pain.

IE we are doing Fish & Chip Fridays, our pick up hours are 4pm to 7pm to start.

I have set the fulfullment hours in the category as for Fridays 4pm to 7pm

The Fish & Chip item is set with a 30 min prep window.

This makes my Actual Available pick to start at 4:30

But if I have the preorder availability at 30 days which I would like for people to pre order various things ahead of time, then the following Fridays show the pick up window starting at 4pm which is correct.

To try to fix pickup window for the next Friday I have to set my pickup window as 3:30pm.

This fixes the closest Fridays pick up window to 4pm, but now future Fridays show pick up availability as 3:30pm which I dont want

The best option is for me to pick my ACTUAL pick up window regardless of the item prep time.

As long as someone preorders more than 30mins before my fulfillment hours the 4pm time slot SHOULD be available to them.

Then this doesn't screw up my future fulfillment dates, all good
