I'm trying to use the restaurant for my business. I'm trying to the get the customer to pay their bill at time of order, but still keep the table they are on, visible on square.
Is this possible?

I took a further look into this for you and unfortunately wasn't able to find anything specifically about requiring payment at the time of order vs paying the bill at the end of a dining session.
It's possible there may be a setting that allows the settlement of a bill while keeping a table active, though I'm not all that familiar with the Square for Restaurants app myself. I recommend giving our team a call and asking to speak with a Square for Restaurants specialist - if this is able to be done, they're the team who's going to be able to provide further guidance on this. Once the bill is paid the table is cleared, it's set up that way for table service.
Post COVID - we changed out model to order/pay at the counter so we are in the same situation - i agree it would be handy to track the occupied tables, even when the bill is settled.
