I want to offer 2 sauces free with my orders but anymore the client has to pay. So when the pick say wedgies they can tick tomato sauce. Bbq sauce and they are free but if they tick a third it then adds a fee.
How can I do this?

Just to clarify your example: Are you planning to offer the same two types of sauces for free each time, while charging for additional sauces? For instance, mustard and tomato sauce would be free, but sauces like mayonnaise would incur a fee. Or are you looking to trigger a fee for any type of sauce once two options are selected?
If it’s the latter, I want to note that Square Restaurants doesn't currently support this functionality. Pricing for item modifiers must be set at the time they're created or updated, and we don't have a rule-based system to trigger charges based on the number of modifiers selected.
A workaround could be to set lower-cost modifiers to $0 and charge for the more expensive ones. Additionally, you might consider requiring a minimum of two modifiers per item to cover the free options and offering options like 'No additional sauces' or 'Do not add any sauces' for customers who prefer to skip the sauces altogether. To set modifier requirements, you'll need to edit your modifier settings with the individual item/s you want this applied to.
