I would like to be able to restrict a discount to a category, item and/or time (just like an automatic discount) but it not be automatic.
Real World Use case #1: We run a cafe and give a discount to our ParkRun customers of 10% off drinks on a Saturday morning from 8:30am-10am. This discount isn't for everyone, so can't be automatic. However, to ensure that it only applies to drinks, and not food, the sales team need to process the food and drinks in a seperate transaction, otherwise the 10% discount will apply to the whole transaction.
Real World Use case #2: similar to above, but we give our staff a free drink while on shift. this is set up as a 100% discount, but as with the parkrun discount, we have to put through the drink as a seperate transaction to the food, otherwise it discounts the whole transaction.
conclusion/request:We would like to have the discount set up with a rule to apply only to one or more category when the discount is manually applied.

I wanted to add to what @lawnbrook suggested here. You can manually remove discounts from individual items on the "Review Sale" screen by selecting the item to view its details.
For example, in the screenshot, I've applied multiple discounts to this transaction, but toggled off all but one for this specific item. You have the option to either manually remove the discount from other items in the transaction, or disable automatic discount rules as suggested above and manually apply the discount to the relevant item.
You are correct in that the ability to limit manual discounts to specific items or categories in your Item Library is currently not supported. I'd be more than happy to raise this feedback to our Product Team for consideration.
