At check out, some items give me the option to choose by a different price and others don't

I have this situation going on right now and I can't find a reason to it. Most of the items I have in my library have an option set up - I have a jewelry retail store so most of the pieces vary in color, length, and so on. On most of the items, when I hit the Item to check out a second screen appears and lets me choose from that set of options before making it to the list of check out items.. so lets say I'm selecting the item "Pineapple Necklace", the normal situation would be it lets me choose the metal before adding up at the checkout total (since they vary in price this is what makes sense to me and why it is so important).. but only a few items on the library are just adding themselves to the check out list without letting me choose the option and it just picks the first item of the list option and adds it to the check out total. I can fix this later on when I select the item but it is a manual step that I have to do myself and since it doesn't happen every time, it's very hard to know when there are other options to choose from that item. Not sure I'm being clear but would LOVE some help with this please!

Whenever you set those other options, did you use variations or modifiers for your items? 

Also, do you have base prices set for your items?
