How can i give purchasers the option to choose what company, type of delivery they want?
I wanted to have
Royal mail first class
Royal mail tracked
Evry
Local within 2.5 miles
but I only seem to be able to make one profile for delivery with one set price. If I add another because it contains the same countries the first gets deleted.
I've added local but it never became an option on the published site.

You can only assign countries to one shipping rate profile at a time, which is why you're seeing one of your profile deleted. If you'd like to offer different shipping options, you'll have to create different rates within a same shipping profile:
If you'd like to offer local delivery within 2.5 miles, meaning orders are delivered by your own couriers or delivery staff, you will need to set up Local Delivery separately. You'll find more information on this support article. Note that if local delivery is enabled, your customer will have to select it when adding the item to the cart.

There seems to be an issue between where you are saying this is set up and where the online store options are for this, which is what I was trying to do. There is a fulfilment section and shipping in the online part, but when you add a profile there is no option add more than one rate.
I clicked the link for accounts and settings in your message and it took me to a different shipping profile page. It seems like this would be shipping from a physical shop rather than online store.

Hi @beckyricee , apologies for the delayed response.
It sounds like your Shipping Fulfillment section has not migrated to your Dashboard yet - until now you will need to continue setting it in the Online section, and you can disregard the first steps of my post.
You should still be able to add a rate during the shipping profile creation. I checked on one of my test account where the Shipping option is still located on the Online Overview Page, and the Add Another Rate option is located at the very bottom:
If you still don't see the option, I would suggest reaching out to our Support Team by email, phone or social media (Facebook, Instagram, X). They'll be able to take a closer look at your settings and file a ticket if needed.
