Hi my stock only syncs if I set fulfilment to shipping. However we do not ship ! Any idea how I can fix this please.

From what I've tested so far, while you need to assign a location from which the site will ship from, you don't need to set the fulfilment to shipping for stocks to appear and deduct! This is purely a mechanism in the backend to help the system know from which location it should be pulling item details and stocks from.
If you have set your shipping location from Fulfilment > Shipping (like in the screenshot below) and the stocks are still coming up as a - in your item library, please make sure stock tracking has also been enabled.
You can check this by clicking into the item you wish to track stock for and enabled stock tracking from there. Stocks will sync between your online site and your Point of Sale app for in-person payments.
If you have enabled stock but they are still not coming up when items are set to pickup or delivery, it'll be best to contact our Support team directly as there might be some additional account-specific settings they can check to ensure everything is working as expected.

Just to clarify - are you looking to hide the stock available that is displayed on the Point of Sale app and Dashboard? Or is the stock not appearing at all? Can you share a screenshot if at all possible, please? This will help me better troubleshoot the issue. Thanks!

So at the moment, it is not possible to hide the stock available on the Point of Sale app. I can definitely see why it would be a useful feature to have if you are concerned about your staff changing things without your knowledge. I'll be sure to pass this over to our team as feedback.
However, what you could do is set up Team Permissions using Team Management so that your staff does not have access to the item tab on your account. To set up permissions from your Dashboard:
Note: Team Permissions can also be enabled when creating a team member for the first time.
Team permissions - access to items toggled ON.
Team permissions - access to items toggled OFF.
