Pickup Orders: Printing Order/Sending Receipt/Charge-Back

We just started selling and one of our customers came and picked up the order and the person in charge just gave them the order without marking it as ready and then marking it as complete as they were unaware of what the process was.  So, I just went to the order and processed the order as complete.

 

There are other options available such as "Send receipt" and "Print Order".  Do I need to send a receipt or print the order for the customer when they are picking them up?  Is it not done automatically?

 

Also, given that the orders can be hundreds of dollars and we have a pending order of almost $500, as a business how do we protect ourselves from charge-backs when a customer comes and picks up an order and we mark it as complete? That is they inspected the order and they picked it up.

When your customers place their orders, are they all done online, in person, or a mix of both? Also, if you use an online store, what website builder did you use to create it, and what is the URL?
