Organization question

New to setting up my online store and hoping for a little guidance on if what I'm looking for is possible. I sell mostly one of a kind pieces online, at festivals, and in retail locations. When I'm at a festival, I know I can turn off the store to ensure no double sales. My question is how to handle the retail locations. Ideally I'm hoping I can enter 5 products and categorize them as Store A so they are tracked with my inventory, but not available for purchase on the online store. Next month I may move that product back to my online store and send Store A new products. At that point, I'd change the category from Store A to Online and they should show in the online store. I've thought locations would work, but the only way to not have it appear online is to deactivate it and then I can't assign new products to it. Any suggestions? Or am I asking too much, lol. Thanks in advance for any ideas.

Have you tried changing the "Channels and Visibility" under the "locations and channels" selection in the item key setup?   I would think this should work for you, but you will obviously need to set/change the items accordingly.

I am not seeing how to check this. Can you tell me how to get there?  I've tried the search bar for channels, visibility, and I'm not seeing anything.
