Is there a way to record & deduct inventory from a cash sale?  I often work with purchase orders for clients but was wondering if there's a way to record what inventory was sold to what client.

Create a profile for your clients using Customer Management. From there, you'll be able to attach sales to your clients. As long as stock amounts are added to your items, inventory will deduct no matter if your client pays with cash or card.
