How to set up inventory so online orders for the future aren't affected by daily 86's

Greetings!
We see how inventory is able to updated daily with the .csv or google sheets import/export system, but that only updates our inventory of that day, correct? How do we set up a default inventory for the rest of the week per day, so customers can order ahead online?

We're a bakery so our items are made fresh every day. All that's to say, if we're out of an item today it doesn't mean we'll be out tomorrow, so we want our customers to be able to order in advance for tmrw (not have to wait for the day of to place an online order)

Regarding your inventory question, it sounds like you're currently manually adjusting your inventory levels. Perhaps scheduling inventory restocks may be a good fit for you.
