We sell seedlings, and although folks start placing pre-orders in February, we only want pick ups to happen in a limited date range in May. I appreciate that we can limit the number of orders per 15 minutes, but need to figure out how to make sure orders are placed for the appropriate dates. Is there a way to do this?

There is a way to restrict dates on your pick-ups, if you'd like. Check out the Settings under your Online Store > Settings > Pickup & Delivery > Edit Location > Restricted Dates.
