So I've seen a lot of people have this issue and as far as I can tell it has not be addressed. Put simply the aspect ratio between mobile and desktop is different. That means it's imposable to have an image that has the correct pixel ratio needed to get an image to look good in both views. When ever you set an image for a banner in desktop it will automatically be cropped for the for the mobile view. Ill attach what the problem looks below.
My ratio is 2000x1000 for the image.

I was able to track down your current site and tested it on both Android and iOS devices to check the mobile view, everything appears to be displaying normally on my end per my screenshot below. Love the site design by the way!
From the blue outline in your screenshot, it looks like it was taken while in the Site Editor. When switching between mobile and desktop view in the editor, is that where you’re noticing the image isn’t resizing to fit the page width?
If so, I’d recommend trying some general browser troubleshooting: sign out of your Dashboard, clear your browser cache and history, then open a new window or try an incognito browser session to see if the issue persists. If the problem continues in preview mode or while editing your site, let me know, it should ideally display the same as what we’re seeing on your live site.
