I changed the language to French as the display langage for in my online checkout page (this is the page that comes from an item shared link or QR code). Now I don't know how to change it back to English. My account language is set to English in my preferences.

I am sorry you are having some issues changing the language online. When you go to the Square Online Dashboard > Settings > Language & units. Does that not work?
If you are still having issues please reach out to Square Online at 855-809-9000 / squ.re/contactsqsupport so they can look further into your settings and further assist.
I just checked and it's already set to English.
