How do I add a booking fee to my site?

I'm new to this. I had a POS for a long time but this is a different beast. 

Any wisdom on Appointments would be great!

Welcome to the Community. 

Do you just want the fee whenever a customer books with you or if there is a no-show? You have a couple of options. 

You have the option to create you're own tax where you can attach to checkout. Here is some more information with the Support Article.
