Hello @loliver - Great question! While you can Manage Stock in Square Online we don't have a way to limit the class size, this is a feature request.
I would like to look around in our community for more sellers who have run into the same thing as you, If I find additional details to provide or a good workaround I'll make sure to reach out again.
