Can we please have the option to add a same item to multiple shipping profiles

You should be able to add the same item to multiple shipping profiles, are you able to provide screenshots of what you are seeing? I'd be happy to take a look at this for you and help push you in the right direction.

Im trying to add one item to U.S. shipping profile and an International shipping profile.
