Is there a way of checking that I've set up my delivery charges correctly for customers outside of my home country? In particular I've set up shipping profile/rates for the USA.
I've tried to 'buy' one of my own products using a USA post code etc. but my checkout/basket does not seem to want to display the delivery charges.
Obv I'd like to be able to check everything works and that customers will be charged correctly for delivery whatever country they are purchasing from.

I tried to test this out and ran into the same situation as you. I think we would need a VPN to test this out.
Do you have shipping set up for other countries like the UK and Ireland that you would be able to test?
If those are working and set up the same as the US, it would indicate everything is in order.
