Allowing one item to be sold even if out of stock or on pre-order

I am trying to allow one item to be sold even if it goes out of stock online or set it up for pre-orders. However I want to leave the rest of my site on not displaying out of stock items. Is this possible? How do I set up a pre-order?

This would be considered a feature request at this time, @coteaucottage

We are working hard on Square Online and hopefully in the future we may be able to include this feature.
