On my printer profile page there are no references to when receipts print. Everywhere I read there should be a toggle button but there is not. It used to ask me if I wanted to email/print/text a receipt but no longer, it just automatically prints a receipt.

Can you upload a photo of your printer profile/ settings? To confirm, are you using the standard point of sale app on the register? I will keep an eye out for your reply.
I have the photo but don't know how to easily get it to you? The camera icon to insert an image wants a source but doesn't allow me to upload it? I use the square register that has the white icon with the gray squares.
To upload a photo, try signing out of the Square community and back in. Let me know if that works @chouettelisa.

I would love to be helpful here but these profiles have really confused me as well and I haven't messed with them too much unless I have to. I'd love to get rid of these profiles or have them be optional honestly.
