Roughly 5% of the time, the register prints a customer's ticket stub with a random string of characters instead of a number from 1-100.
@smokestackroast This is just a thought, do you have your Stub Type set to Automatic? Square states if random strings appear it usually means the information is being interpreted as a manual entry.
On your Square POS tap More/Settings/Hardware/Printers.
Select your printer profile you use for order tickets.
Make sure Order Ticket Stubs is enabled.
Then verify that stub type is set to Automatic.
Save your changes.

If you're using manual tickets and your server does not enter a name or a number, you will see "Receipt #xxxx" where xxxx is a randomly created number generated by Square for ticket identification. This will show on ticket stubs too.
Now, if your kitchen tickets are showing a number but your ticket stubs aren't, then that is a problem that support needs to investigate.
